- Heat the olive oil in a medium pot over medium heat, and add the carrots, celery, and onions.
- Saute for about 5 minutes, until softened. Add the mushrooms, garlic, tomatoes, stock, wine, thyme, and sea salt.
- Bring to a simmer and cook for about 20 minutes, until flavorful. Add the beans and then spoon the mixture into 2-3 ovenproof bowls.
- Mix together the topping ingredients, then sprinkle them over the dishes. Place in a 400°F degree oven and bake for about 15 minutes, until bubbling and the top is lightly browned. Let cool slightly before serving.
