Ingredients You Need for Healthy Blueberry Baked Doughnuts [Vegan, Gluten-Free]

For the Doughnuts:

  • 1/4 cup brown rice flour or gluten-free oat flour
  • 1 scoop vegan vanilla protein powder
  • 2 tablespoons baking stevia or coconut sugar
  • 2 tablespoons unsweetened applesauce
  • 3 tablespoons almond milk
  • 1 flax egg (1 tablespoon ground flax plus 3 tablespoons water)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 cup frozen blueberries

For the Blueberry Glaze:

  • 1/4 cup frozen blueberries
  • 1/4 cup plus 2 tablespoons water
  • 1 teaspoon lemon juice
  • 1 scoop vegan vanilla protein powder
  • 1 tablespoon sugar-free confectioner's sugar
  • 1 tablespoon coconut oil, melted

How to Prepare Healthy Blueberry Baked Doughnuts [Vegan, Gluten-Free]

  1. Preheat oven to 350°F and prepare your standard doughnut mold with non-stick spray and be generous. Make the flax egg. Combine ground flax with water and let sit for 10 minutes.
  2. Place your flax egg, baking stevia, applesauce and almond milk into a mixer and beat until fluffy. In a separate bowl, stir together the flour, protein, baking powder, and baking soda. Add your dry ingredients into the mixer and stir until combined. Fold in frozen blueberries.
  3. Fill five doughnut molds with batter. Bake doughnuts for 11-12 minutes. Remove from oven and then let them cool completely.
  4. While doughnuts are cooling, you are going to make your blueberry glaze. Place the frozen blueberries, 2 tablespoons water and lemon juice into a small pan or pot over medium heat for 2 minutes or until colors start to burst.
  5. Remove from heat and pour contents into a blender. Add the melted coconut oil and 1/4 cup water into blender and blend on high until smooth. Add in protein powder and sugar-free confetioner's sugar and blend again until smooth. Pour contents into a shallow bowl and let sit for a few minutes to cool.
  6. Dip doughnuts into glaze and serve.
