Emerald Kale Detox Soup [Vegan]

Ingredients

  • 4 cups tightly packed kale (I used baby kale which made things even easier--no need to chop!)
  • 1 large cucumber, peeled, de-seeded and chopped
  • 2 cups chopped zucchini
  • 2 green onion stalks, trimmed
  • 1 avocado, halved
  • juice of one lime
  • large handful of fresh parsley

Preparation

  1. Place all ingredients (except for 1/2 of the avo) in a blender and blend until smooth.
  2. Portion and serve, garnishing with the remaining 1/2 of avocado and whatever else you like.
  3. Enjoy!
