    This colourful, chilled and refreshing crispy tofu avocado bowl is packed with fibre, protein, antioxidants, heart-healthy fats, minerals and vitamins. It is the perfect summer or end-of-summer dish!

    Ingredients You Need for Crispy Tofu Avocado Bowl [Vegan]

    Crispy Tofu Avocado Bowl:

    • rocket or arugula leaves
    • red cooked quinoa
    • avocado slices
    • crispy tofu slices
    • cucumbers
    • blueberries
    • black sesame seeds
    • Salt & pepper, to taste

    Creamy Balsamic Vinaigrette:

    • 4 tablespoons balsamic vinegar
    • 3/4 cup Extra Virgin Olive Oil
    • 2 tablespoons water (can add more later for a more fluid consistency)
    • 1 garlic clove
    • 2 tablespoons 100% maple syrup
    • 1 tablespoon smooth Dijon mustard
    • Salt and pepper, to taste.

    How to Prepare Crispy Tofu Avocado Bowl [Vegan]

    For the Bowl:

    1. Arrange all ingredients in a bowl.

    For the Dressing:

    1. Put all ingredients above in the blender and blend for several seconds until creamy. Can add an extra 1 or 2 tablespoons of water for a more fluid consistency and quickly blend again. Store in a sealed glass jar or bottle in the refrigerator. Drizzle over salads.
