Ingredients

  • 1 tablespoon of ground flaxseed
  • 2 tablespoons of water
  • 1 1/2 tablespoons of brown rice syrup
  • 2 tablespoons of sunflower oil (good quality)
  • 2 tablespoons of water
  • 2/3 cups of chickpea flour
  • 1/4 cup of almond flour
  • 1/4 cup of coconut sugar
  • 1 tablespoon of cocoa powder
  • 1/2 teaspoon of baking soda
  • 1/3 cup of dark chocolate 70% cocoa, chopped coarsely

Preparation

  1. In a bowl mix the ground flaxseed with water. Let stand for 10 minutes.
  2. Add the brown rice syrup and oil to this mixture. Mix well with a wire stick.
  3. In another bowl add all the dry ingredients: flour, cocoa, baking soda, coconut sugar and chopped chocolate.
  4. Mix the contents of the two bowls with a wooden spoon until dough is obtained. If it is too dry or stiff, add a tablespoon of water, if it is too soft add another spoonful of chickpea flour.
  5. Cover the bowl with the lid and refrigerate for at least 1 hour.
  6. Preheat the oven to 338°F and line an oven tray with parchment paper.
  7. Remove the dough from the refrigerator, make small balls, place them on the tray away from each other and flatten them with your hands or the bottom of the glass.
  8. Bake for 13-15 minutes.
  9. Remove the tray from the oven, leave the cookies there for 5 minutes.
  10. With care and with the help of a spatula, remove them and place them on a mesh to cool.
  11. After they cool, keep them in a jar or box, tightly closed.
