Cocoa Cookies [Vegan]

Ingredients
- 1 tablespoon of ground flaxseed
- 2 tablespoons of water
- 1 1/2 tablespoons of brown rice syrup
- 2 tablespoons of sunflower oil (good quality)
- 2 tablespoons of water
- 2/3 cups of chickpea flour
- 1/4 cup of almond flour
- 1/4 cup of coconut sugar
- 1 tablespoon of cocoa powder
- 1/2 teaspoon of baking soda
- 1/3 cup of dark chocolate 70% cocoa, chopped coarsely
Preparation
- In a bowl mix the ground flaxseed with water. Let stand for 10 minutes.
- Add the brown rice syrup and oil to this mixture. Mix well with a wire stick.
- In another bowl add all the dry ingredients: flour, cocoa, baking soda, coconut sugar and chopped chocolate.
- Mix the contents of the two bowls with a wooden spoon until dough is obtained. If it is too dry or stiff, add a tablespoon of water, if it is too soft add another spoonful of chickpea flour.
- Cover the bowl with the lid and refrigerate for at least 1 hour.
- Preheat the oven to 338°F and line an oven tray with parchment paper.
- Remove the dough from the refrigerator, make small balls, place them on the tray away from each other and flatten them with your hands or the bottom of the glass.
- Bake for 13-15 minutes.
- Remove the tray from the oven, leave the cookies there for 5 minutes.
- With care and with the help of a spatula, remove them and place them on a mesh to cool.
- After they cool, keep them in a jar or box, tightly closed.
