  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/4 cup cacao powder
  • 1 big pear
  • 2 tablespoons coconut sugar
  • 3 tablespoons maple syrup
  • 2 tablespoons non-dairy milk
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 handfuls walnuts
  • 2 handfuls chocolate chips

Preparation

  1. Preheat the oven to 355°F.
  2. Combine the almond flour, whole wheat flour, cacao powder, baking powder, baking soda, and cinnamon together in a bowl.
  3. Chop the pear and transfer it to a blender with a little bit of water. Blend until you have a pear purée. (Alternatively, you could purée it with an immersion blender.)
  4. Transfer this to another bowl and add the maple syrup, coconut sugar, non-dairy milk, and vanilla extract.
  5. Mix the wet and dry ingredients together and fold in the walnuts and chocolate chips.
  6. Line a baking pan with baking paper or smear with some oil. Pour the mixture into the pan. Add some sliced pears and walnuts on top and bake for 20 minutes.
