Cheesy Broccoli Pasta [Vegan]

Cooking Time



For the cheesy sauce

  • 2 cups oats
  • 1 cup sauerkraut juice or water - if using water, be sure to add a bit extra salt to taste
  • A pinch of black pepper
  • 2/3 cup nutritional yeast flakes
  • 2 tablespoons chickpea miso paste
  • 1 red pepper seeded
  • Juice of 1/2 a lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon turmeric powder

For the Broccoli & Pasta

  • 3-4 cups roughly chopped broccoli
  • 3 cups bean pasta - this recipe used black bean
  • Red pepper flakes and extra black pepper for topping, optional


For the Cheesy Sauce

  1. Blend all ingredients until smooth

For the Broccoli & Pasta

  • Steam broccoli for 3-5 minutes, or until slightly tender
  • Cook pasta according to package directions
