Ingredients

  • 1⁄2 medium yellow onion, peeled and chopped
  • 1⁄2 cup sliced white mushrooms
  • 1 medium carrot, peeled and chopped
  • 3 cloves garlic, peeled and minced
  • 2 (1-pound) blocks extra-firm tofu, chopped into cubes
  • 2 tablespoons olive oil
  • 1⁄2 cup white cooking wine
  • 3 large tomatoes, diced
  • 1 (6-ounce) can tomato paste
  • 1 bay leaf
  • 1⁄2 teaspoon salt
  • 1 teaspoon dried parsley leaves
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon dried basil leaves

Preparation

  1. In a large saucepan over medium-high heat, sauté onion, mushrooms, carrot, garlic, and tofu in oil for 5 minutes.
  2. Reduce heat to medium-low, and add wine, tomatoes, tomato paste, bay leaf, salt, and remaining spices. Stir up well. It’ll smell heavenly.
  3. 3. Cover the pan and let simmer for 20 minutes. Stir every once in a while, and don’t forget to take out the bay leaf before eating.
