    Apple Cinnamon Rolls [Vegan]

    These apple cinnamon rolls are covered in delicious cashew icing and spiced caramel. They are the perfect treat to spend time making in the kitchen during the cold weather!

    Ingredients You Need for Apple Cinnamon Rolls [Vegan]

    For the Rolls:

    • 2 Apples medium size
    • 2 teaspoons (store bought or homemade) Apple pie spice
    • 3 cups Whole grain spelt flour
    •  1 cup (unsweetened) Almond milk
    • 1/4 cup Vegan butter
    • 1 1/4 teaspoon Active yeast
    • 1/4 cup Xylitol/ Birch sweetener
    •  1/4 tsp Himalayan pink salt
    • Baking pan 8 X 8inch (20 X 20cm)

    For the Cashew Icing:

    • 1 cup cashews (presoaked for 4 to 6 hours)
    • 1/4 cup of the thick part Canned coconut cream, plus all the coconut water.
    • 1/4 cup Xylitol – Bitch sugar
    • 1 teaspoon Vanilla extract
    • 1/4 cup Lemon juice

    For the Spiced Caramel:

    •  1/2 cup Maple Syrup
    •  2 tablespoons Lemon juice
    • 1 teaspoon Cinnamon Spice
    • 1/4 teaspoon Himalayan pink salt

    For the Apple Pie Spice:

    • 4 teaspoon Ground cinnamon
    • 1 1/2 teaspoon Ground nutmeg
    • 1/2 teaspoon Ground allspice
    • 1 teaspoon Ground ginger
    • 1 1/2 teaspoon Ground cardamom

    How to Prepare Apple Cinnamon Rolls [Vegan]

    For the Rolls:

    1. Peal and wash your apples, then cut in half.
    2. Slice each half with knife or mandolin slicer, begging from the edge towards the middle. Flip to other side and discard the centre. Repeat until both apples are sliced.
    3. Mix your slices in a bowl with 2 teaspoons apple spice and 2 tablespoons of Xylitol, cover with lid and store in the refrigerator.
    4. In a small pot, heat up the milk with 3 tablespoons of butter, until the butter melts. Make sure it doesn’t boil.
    5. Transfer into a bowl and wait few minutes to cool down.
    6. When lukewarm, sprinkle with yeast and set aside for 10 minutes for the yeast to activate.
    7. Mix in the remaining Xylitol and gradually add the flour, 1/2 cup at the time while continually mixing with wooden spoon and eventually with your hands.
    8. When the dough becomes ready, transfer it on lightly floured surface and kneed for 3 to 5 minutes until sooth.
    9. Create a ball and transfer into a lightly greased bowl. Seal with plastic wrap and set aside for 1 hour.
    10. When the dough is double in size, melt the remaining butter.
    11. On a lightly floured surface roll the dough in rectangle, about 1/2 inch (1cm) thick.
    12. Brush with melted butter and apply sliced apples evenly all the way to the edges.
    13. When ready, tightly roll the dough into a log.
    14. Using sharp a knife, cut it in half, then cut the halves into half. Repeat, until you get 8 equal pieces, about 1 1/2 inch thick (3cm).

    For the Cashew Icing:

    1. Blend all ingredients in the blender until smooth. If too thick, you may add 1 or 2 tablespoons of filtered water as well. But be careful, add only 1 tablespoon at the time, until you get the desired thickness.
    2. Store in a refrigerator or serve right away.

    For the Spiced Caramel:

    1. In a small pot, bring maple syrup to boil, add rest of the ingredients and stir well.
    2. Reduce the heat and let it simmer for 5 minutes.
    3. Take it off the heat and transfer into small dish. Let it cool down for 10 minutes.

    For the Apple Pie Spice:

    1. Mix ingredients well and keep in a sealed jar.
