The technique is called refrigerator pickling. Simply cut your cucumbers into spears and place them in a mason jar or other heatproof container with an air-tight lid. Add a cup and a half of apple cider vinegar, a handful of dill, sea salt, and peppercorn to taste, lemon juice, maple syrup, and hot water. Close the lid and pop the jar into the fridge. They’ll be transformed into pickles overnight!
