A state banquet at Windsor Castle made quiet history last month. According to Plant Based News, King Charles III hosted Nigeria’s President Bola Tinubu and First Lady Oluremi Tinubu with a menu free of red meat and poultry. The visit took place during Ramadan, and the entire meal was adapted to accommodate fasting Muslim guests with alcohol-free cocktails, no lunch service, and a pescatarian menu that could be enjoyed by all.

Guests sat down to an egg tartlet with watercress, kale, and basil sabayon, followed by turbot and lobster mousse with spinach, sprouting broccoli with Hollandaise, a fricassée of peas and broad beans, and Jersey Royal potatoes. The meal closed with an iced blackcurrant soufflé. A bespoke non-alcoholic cocktail called the Crimson Bloom, built around Nigeria’s zobo hibiscus drink, honored the occasion. The thought and cultural care in that menu deserves its own moment of appreciation.

For those who follow King Charles closely, the plant forward direction of the evening fits a broader pattern. According to Plant Based News, Charles gave up red meat during cancer treatment in 2024 and has for years skipped meat and fish at least two days per week for environmental reasons. He has also limited his dairy intake over concerns about its carbon footprint. In 2022, he banned foie gras from royal menus entirely over animal welfare concerns.

This is a person who has championed the environment publicly since the 1970s, and that conviction is now showing up at the dinner table during the most formal events his institution hosts. A state banquet is not a quiet personal choice. It sends a message to every guest and to the watching world about what matters on this planet.
