Lime-Sugar Churros With Caramel Sauce [Vegan]

If you've ever been to a festival, carnival, or fair, the chances are you've seen, or even got the chance to taste, the magical treat that is a churro. While most churros are enveloped in sugary, cinnamon crystals, this recipe puts a twist on the traditional churro flavor and replaces the cinnamon with a tangy lime sugar. The usual chocolate dip that accompanies fluffy churros is also traded in for a coconut-milk based caramel sauce. Yum!

Lime-Sugar Churros With Caramel Sauce [Vegan]

This Recipe is :

Vegan

Ingredients

For the Churros:

  • 1 cup spelt or white flour
  • 2 tablespoons of rapeseed oil
  • 1 tablespoon of cane sugar
  • 2 teaspoons of baking powder
  • 1 1/2 cups boiling water
  • A pinch of sea salt
  • 1 pot of oil, for frying

For the Lime Sugar:

  • 5 tablespoons cane sugar
  • 1 teaspoon cinnamon
  • Zest of 1 lime

For the Caramel Sauce:

  • 1 cup coconut milk
  • 1 cup cane sugar
  • 1/2 cup non-dairy butter
  • A pinch of vanilla bean
  • A pinch of sea salt

Preparation

To Make the Churros:

  1. Preheat your oil. Add flour, sugar, baking powder, oil, and sea salt to a bowl and mix thoroughly.
  2. Boil the water in a kettle or pot, add to the flour mixture, and stir. Make sure to combine the water and flour mixture well.
  3. Add the dough to a pastry bag with a star tip. Fry the churros by squeezing the dough through the pastry bag until the desired length it achieved and then cut with scissors over the oil. Dump in slowly and fry 3-5 at a time for about 4 minutes, or until golden brown.

To Make the Lime-Sugar:

  1. Zest the lime and add to a pestle and mortar, or a coffee grinder, with the sugar and cinnamon. Combine until fine. Roll the churros in the sugar mixture whilst still hot.

To Make the Caramel Sauce:

  1. Put all sauce ingredients into a saucepan on medium heat. Stir occasionally for about 20 minutes.
