A recent trip to Thailand showcased all the wonderful dishes and ingredients that this country has to offer. From fresh fruit, coconut curries, rice and noodles and stir-fried vegetable dishes, Thailand is a country with many options for vegetarian and vegan guests. The most popular and well-known Thai dish is "pad thai", something that can be found easily being prepared by street food vendors. For an amount equal to loose pocket change, you will find yourself with a large portion of pad thai, of better quality than many of the restaurants have to offer. Luckily, the ingredients for pad thai are easily found at any grocery store, so you can make it at home. Just imagine you are eating it on a white sand beach!
On a side note, many pad thai dishes contain fish sauce, which of course is not vegan. I have found that most street vendors don't add it to their pad thai, though restaurants will. In it's place, I have used tamari in this recipe.

How to Prepare Street Pad Thai [Vegan]
Noodles
- Cover noodles in cold water and let sit for one minute.
- Drain.
- Heat oil and tamari in a large cast-iron skillet.
- Add the noodles and fry for 2-3 minutes, until noodles are tender.
- Remove noodles onto a plate.
Pad Thai
- Prepare all vegetables and tofu and set aside.
- In the same cast-iron skillet, heat the oil on medium-high heat and add the garlic.
- Cook a few seconds, until fragrant.
- Add the tofu and cook for 1-2 minutes.
- Add the vegetables, sugar, chili flakes, tamari, and water.
- Cook for 2 minutes and add the noodles.
- Cook until noodles and vegetables are tender and heated through.
- Top with your favorite sweet chili sauce, and more tamari if necessary.
- Add peanuts, and green onions.
- Enjoy!
