Ingredients You Need for Creamy Spinach Palak Tofu [Vegan]

  • 3/4 cup of tofu, cut into squares
  • 4 tablespoons coconut oil
  • 1 cup spinach leaves (well drained from the water)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tomato, chopped
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric (curcuma)
  • 1/2 tablespoon curry powder
  • 1/2 cup of soy cream
  • Salt to taste

How to Prepare Creamy Spinach Palak Tofu [Vegan]

  1. Begin by stirring the tofu in 2 tablespoons coconut oil with a little bit of salt.
  2. When the squares start to turn golden, remove from the heat and set aside.
  3. In a non-stick frying pan, sauté in 2 tablespoons coconut oil, onion, garlic and spices.
  4. When the onion is tender, add the spinach leaves and chopped tomatoes. Season with a little salt and cook 10 minutes on low heat.
  5. When it is cooked, add the cream and put everything in a chopper or use the magic wand to puree.
  6. Bring it back to the fire along with the squares of tofu and cook for 5-10 minutes.
  7. Remove and serve with basmati rice.
