Ingredients You Need for Spicy Sweetcorn and Onion Fritters [Vegan, Gluten-Free]

For the Fritters:

  • 1 3/4 cups, plus 2 3/4 tablespoons sweetcorn
  • 1 garlic clove, crushed
  • 1/4 cup or a small handful of fresh coriander leaves, roughly chopped
  • 1/2 cup buckwheat flour
  • 1/2 cup corn flour
  • 1 medium white onion, finely chopped
  • 2 tablespoons light olive oil
  • 1/2 cup water
  • 1/4 teaspoon chili flakes
  • A pinch of salt
  • A pinch of black pepper
  • 2 large white onions, sliced into rings

For the Yogurt Sauce:

  • 1/3 cup of plain soy yogurt
  • 1/2 a lime, juiced
  • 1/4 cup fresh coriander, roughly chopped
  • A pinch of black pepper

How to Prepare Spicy Sweetcorn and Onion Fritters [Vegan, Gluten-Free]

To Make the Fritters:

  1. Slice 2 white onions into rings and place aside.
  2. Place all of the fritter ingredients into a large mixing bowl and mix until fully combined, like a batter.
  3. In a large flat pan, on low/medium, heat up 2 tablespoons of light olive oil.
  4. Place the onion rings into the pan and add in some of the sweetcorn mixture, making sure to keep in the onion rings to prevent the batter from spilling out.
  5. Cook for 15 minutes, or until golden brown, making sure to turn them over regularly for an even cook.
  6. Serve warm with a drizzle of coriander yogurt.

To Make the Yogurt Sauce:

  1. Place the soy yogurt, lime juice, coriander, and black pepper into a bowl and mix until combined.
  2. Serve the fritters with some fresh salad, a drizzle of coriander yogurt, and a slice of fresh lime.
