They are high in protein, gluten-free, Vegan, and Keto and Paleo-friendly!

Salted Peanut Blondie S’mores [Vegan, Gluten-Free]




Cooking Time




  • 1 Cup Ground Almonds
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 Cup Sugar
  • Salt
  • 1 Flax Egg
  • 1/4 Cup Melted Coconut Oil
  • 2 tablespoons Tahini
  • 3 tablespoons Pistachio Milk (or plant-based milk of your choice)
  • Handful of vegan Marshmallows (topping)
  • 1/2 Vegan Protein Bar chopped (sub with chocolate chips) (topping)


  1. Preheat to the oven to 350°F
  2. Make your flax egg by combining 1 tablespoon Flax and 3 tablespoons Water and leave to thicken
  3. Combine all the dry ingredients in a bowl (almonds, soda, baking powder, sugar, salt)
  4. Combine all the wet ingredients in a bowl (flax, coconut oil, tahini, milk)
  5. Gradually add the dry ingredients to the wet and mix until well combined
  6. Pour the mixture into a lined baking tin then sprinkle the vegan marshmallows and chopped protein bar
  7. on top pushing slightly into the mixture
