How to Prepare Roasted Broccolini [Vegan, Gluten-Free]
- Preheat the oven to 400°F.
- Put cashew nuts, nutritional yeast, garlic powder, salt, and pepper into a processor or a high-speed blender. Process until it turns to powder. If using, hemp seed simply mix the ingredients together.
- Trim the end of the broccolini (about 2 inches) and toss them in olive oil until well coated.
- Line a parchment paper over a baking sheet and lay the broccolini in a single layer. Sprinkle the spice blend on broccolini, flipping them and coating both sides.
- Roast in the oven for about 20 minutes. Start checking around 15 minutes mark.
