  • 4 cups (946 ml) water
  • 2–3 leaves kale, ribbed and sliced thin
  • 1 cup (150 g) snow peas
  • 1/2 (12-oz [340-g]) package firm silken tofu, cut in ½-inch (13-mm) cubes
  • 4 tablespoons (55 g) white or yellow miso paste
  • 2 green onions, sliced thin
  • Avocado, for serving, optional

How to Prepare Miso Greens Soup [Vegan]

  1. Bring water to a boil. Add the kale and snow peas. Cook for about a minute, reduce heat, and add the tofu.
  2. In a separate bowl, mix the miso and 4 tablespoons (60 ml) of soup water to make a paste. Add to the soup, along with the green onions and optional avocado. Serve immediately.
  3. Tip: If you want to make this a touch heartier, you can add 1/4 cup (30 g) of orzo pasta. Just be sure to give the pasta a head start before adding the vegetables.
