Ingredients You Need for Cauliflower Quinoa Pizza With Cashew Cheese [Vegan, Gluten-Free]

For the Base:

  • 2 cups cauliflower, finely chopped
  • 2 tablespoons chia seeds, soaked in 1/2 cup water
  • 7-8 tablespoons quinoa flour
  • 1 tablespoon dried oregano
  • Salt, to taste

For the Topping:

  • Red onion rings
  • Cherry tomatoes
  • Dried oregano
  • 3 garlic cloves, sliced

For the Cashew Cheese:

  • 1/2 cup cashews, soaked 30 minutes in water
  • 1/2 cup water
  • 2 garlic cloves
  • Salt, to taste
  • 2 tablespoons lemon juice

How to Prepare Cauliflower Quinoa Pizza With Cashew Cheese [Vegan, Gluten-Free]

  1. Preheat oven to 390°F.
  2. Prepare chia gel by soaking the chia seeds in water for 15-20 minutes.
  3. Chop cauliflower in your food processor until you get rice consistency
  4. Add chia gel in the cauliflower and mix well.
  5. Add 7-8 tablespoons of quinoa flour. Mix very well.
  6. Using your hands, press mixture evenly into a pizza pan or a pie pan.
  7. Bake the crust about 10-15 minutes.
  8. Take crust out of the oven and top with onion, garlic, and cashew cheese. Return to oven and bake 5-10 minutes.
  9. Sprinkle with dried oregano. Serve.
