Ingredients You Need for Caramel & Coconut Latte Overnight Oats [Vegan]

  • 1 cup rolled oats
  • 2 tablespoons chia seeds
  • 1/2 cup cold brew coffee
  • 1 cup low-fat coconut milk
  • 2-4 tablespoons date caramel (or more to taste)
  • coconut whipped cream for serving (optional)

How to Prepare Caramel & Coconut Latte Overnight Oats [Vegan]

  1. Start by making your cold brew if you're not using store-bought. You'll need to soak your coffee beans overnight before making your oatmeal, so you'll want to make this the night before you plan to soak your oats.
  2. Soak your oats and chia seeds in cold brew and coconut milk overnight in the fridge.
  3. Make date caramel if you don't have some already.
  4. Serve with coconut whipped cream or your choice of toppings. Cocoa nibs and chopped nuts would be great too!
