For the majority of Americans, red meat, including beef, is off the table. Or, at least, eaten rarely. A new study published in the scientific journal Nutrients found that on a given day, only 12 percent of the population eats more than half of the beef consumed by the nation. The people who consume disproportionate amounts of beef tend to be men or adults between the ages of 50 and 65 years. The study found that people below the age of 29 and above the age of 66 are the least likely to consume disproportionate amounts of beef. Additionally, the study found that those who had viewed the United States Department of Agriculture’s MyPlate guidance graphic were less likely to consume large amounts of beef.

The study looked at beef consumption as compared to the Dietary Guidelines for Americans. These guidelines suggest that, based on a calorie intake of 2,200 calories per day, four ounces of poultry, eggs, and meat is the recommended amount. For the study, beef was chosen due to its high environmental impact. Researchers looked at the meals that the 10,000 people participating consumed over 24 hours.
The researchers hoped that the study would assist in creating messaging crafted to reduce the consumption of meat, particularly beef. Meat production, particularly beef, is incredibly environmentally costly. Thus, reducing the consumption of these products could have far-reaching positive environmental effects.
The surprising results of the study shocked researchers. On one hand, the majority of beef being consumed by such a small percentage of the population gives hope that, with targeted messaging, this group could reduce beef consumption. This would have a huge and positive environmental impact. On the other hand, researchers fear that this group may be extra resistant to cutting out or reducing beef in their diets.
