Cauliflower spots are generally a result of oxidation, a natural process akin to the browning of an apple slice after it’s been cut. According to Norah Clark, a chef and registered dietitian, this aging and oxidizing happens mainly due to exposure to air and light.

Now, does this mean your cauliflower is spoiling? Not necessarily. As per health research specialist and dietitian, Kelly Costa, the oxidation doesn’t produce harmful compounds. Hence, it’s entirely safe to consume a cauliflower that has a few of these spots.

But, when should you be cautious? If the dark spots are too widespread, if the cauliflower has a peculiar odor, or if it feels slimy, then it’s a sign that the vegetable might have gone bad. Clark suggests relying on visual and sensory cues to ascertain the freshness of your cauliflower. Changes in color, strong odors, and texture shifts (like sliminess) are the signs to look for.

To prolong the freshness of your cauliflower and to reduce the chances of these spots appearing, Kelly Costa recommends storing it in an airtight container inside the fridge. The chilly environment slows down the oxidation. And a pro tip: avoid washing the cauliflower before storing it, as moisture can fast-track oxidation.

Lastly, always aim to buy the freshest cauliflower, characterized by a pristine white hue with minimal spots. Fresh cauliflower takes longer to show signs of aging or oxidation.
