Santa Clara Valley Healthcare (SCVH) has become the first public hospital system in the U.S. to introduce Universal Meals, part of its ambitious new Climate Pledge. This initiative aims to cut carbon emissions by 50% by 2030, leading to net-zero emissions by 2050.
So, what’s on the Universal Meal menu? Think plant-based, free of animal ingredients, and devoid of the top nine allergens. These meals are not just inclusive and safe for people with dietary restrictions, but they’re also conducive to faster patient recovery. SCVH’s Climate Pledge reflects an increased recognition of the interplay between human health, dietary choices, and environmental sustainability.
Endorsed by the Physicians Committee for Responsible Medicine, Universal Meals aim to boost health equity in our communities by making nutritious and sustainable food choices accessible to everyone. The concept aligns with recommendations from the American Medical Association and the American College of Cardiology, both of whom encourage plant-based meal options in hospitals.
Following SCVH’s example, other hospitals like Rush University Medical Center in Chicago and Emory University Hospital in Atlanta have also adopted Universal Meals.
