Ingredients You Need for Lime Cashew Cookies [Vegan, Raw]

  • 1 cup dates, pitted
  • 1/4 cup raw almonds
  • 1/4 cup raw cashews
  • 2 teaspoons lime juice
  • zest of one organic lime
  • 1/4 cup crushed cashews or hemp seeds

How to Prepare Lime Cashew Cookies [Vegan, Raw]

  1. Combine the first five ingredients in your food processor.
  2. Using coconut oil or water on your hands, remove mixture from blender and roll into balls.
  3. Roll balls in crushed cashews or hemp seeds coating them.
  4. Press them down into cookies or leave them as balls if you’d like. Serve, enjoy!

  1. I made these cookies which are so yummi. But my big problem is that my blender is not able to make a paste out of the dates. Is there a tastefull way to replace the dates?
