Vegan Cake-Batter Doughnuts

These secretly healthy doughnuts look and taste like they came straight from the nearest Krispy Kreme, but they are even better because they're vegan.

Cake-Batter Doughnuts

This Recipe is :

Dairy FreeKid-FriendlyVegan

6 doughnuts

  • 1 level cup spelt or white flour (or a gluten-free mix)
  • 2/3 cup milk of choice (almond, coconut, soy… don’t use rice milk for this recipe)
  • 1/3 cup plus 1 tbsp sugar or evaporated cane juice
  • 1/2 tsp apple-cider vinegar
  • 1 and 1/2 tsp egg replacer powder
  • 1 and 1/2 tsp baking powder
  • 3 tbsp oil or pre-melted vegan margarine
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt (if using oil, add a tiny pinch more salt)
  • Optional: sprinkles! Or cinnamon, raisins, peanuts, chocolate chips… be creative!

  1. Preheat oven to 350 F.
  2. Combine dry ingredients. In a separate bowl, combine oil, milk, and vanilla.
  3. Then add the vinegar and immediately pour wet onto dry.
  4. Mix (but don’t overmix), and pour into greased doughnut pans. (If you don’t have doughnut pans, see below link)
  5. Cook for 12 minutes.

Katie Higgins writes the vegan blog, Chocolate-Covered Katie, where she creates recipes with three things in mind: Healthy. Vegan. Delicious. Katie refuses to believe that a person must sacrifice yummy food in order to be a healthy vegan. We can have our vegan cake (preferably chocolate) and eat it too! On her blog, Katie aims to show that being a vegan is not restrictive; it’s FUN!

Isn't part of the great things about being vegan eating healthful foods? What is it with all the sugar and oil..

Yes, I agree.. these are not much healthier at all. Funny how they swap plain flour for gluten free but the gluten free isn\'t any healthier just gluten free.. Vegan doesn\'t mean healthy by any means.. Anyone can create wonderful tasty deserts but it takes a lot of creativity and a great mind to create yummy healthy deserts.. I think this should be their goal instead of these replacement recipes that are NOT healthy for you.it\'s plain trickery and they hope we don\'t get it.

You could have left out the "F" in your response to the donuts. Very unnecessary, and disappointing. Showing a little more class would have been nice.

I'm relaxed. Having or showing class has nothing to do with not relaxing. Just sayin'.

I see this as humour and not the least bit déclassé.i think you are being oversensitive so we will just agree to disagree. peace and love.

I agree, Linda. Not only that, but it\'s just annoying.
