Ingredients You Need for Perfect Arrabbiata Sauce [Vegan, Gluten-Free]

  • 3.5 ounces dry whole wheat fusilli or penne pasta of choice (gluten-free, grain-free), cooked
  • 1/2 cup, plus 2 tablespoons tomato purée
  • 2 dried red chilis, soaked in hot water, de-seeded and chopped finely
  • 5 cloves of garlic, chopped finely
  • 1 tablespoon high heat oil or vegan butter
  • 3/4 teaspoon dried oregano
  • 8-10 basil leaves
  • 1 3-inch whole piece of carrot, peeled
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon pepper, or to taste
  • 1-2 tablespoons extra virgin olive oil

How to Prepare Perfect Arrabbiata Sauce [Vegan, Gluten-Free]

  1. In a large pan, sauté the garlic and oregano in 1 tbsp of any high heat oil or vegan butter for 3-4 minutes or until fragrant and lightly browned.
  2. Add in the tomato puree, chopped rehydrated red chili, and carrot.
  3. Allow the sauce to simmer for 5-7 minutes.
  4. Add in the cooked pasta and basil leaves, tearing them into smaller pieces just as you add them in.
  5. Mix for 2-3 minutes.
  6. Discard the carrot or use it in a vegetable stock.
  7. Drizzle 1-2 tablespoons of extra virgin olive oil and serve immediately.
