How to Prepare Perfect Arrabbiata Sauce [Vegan, Gluten-Free]
- In a large pan, sauté the garlic and oregano in 1 tbsp of any high heat oil or vegan butter for 3-4 minutes or until fragrant and lightly browned.
- Add in the tomato puree, chopped rehydrated red chili, and carrot.
- Allow the sauce to simmer for 5-7 minutes.
- Add in the cooked pasta and basil leaves, tearing them into smaller pieces just as you add them in.
- Mix for 2-3 minutes.
- Discard the carrot or use it in a vegetable stock.
- Drizzle 1-2 tablespoons of extra virgin olive oil and serve immediately.
