On February 15, 2022, Aqua Cultured Foods, creators of mushroom-based seafood, announced that they’ve finished developing their first commercial product: calamari fries.
Aqua uses novel microbial fermentation technology to create their product, which replicates the taste and texture of calamari. Per serving, it contains a similar amount of protein to calamari, but without the saturated fat and cholesterol. It also doesn’t contain any of the top 10 allergens.
Johnny Carino, a famed executive chef, is their culinary advisor and helped create the calamari.
“As you bite in, you get an immediate crunch note that combines with the realistic, slightly chewy texture of the calamari,” said Carino. “It looks and acts like calamari. There was no learning curve as you’d expect with a completely new product or ingredient.”
Their products are also GMO-free and contain key nutrients like Omega 3’s.
With public awareness beginning to grow about how unsustainable the fishing industry is, this is a perfect time for their product to launch. Investors are predicting that plant-based seafood is a category to watch out for, and alt-seafood sales are already surging.
Besides calamari, Aqua Cultured Foods is also creating shrimp, scallops, whitefish, tuna, and even squid. They will all have a high protein content and not have any of that nasty stuff in them, like cholesterol, saturated fat, or mercury.
The calamari fries will be available later this year.
