Ingredients You Need for Cherry Pumpkin Galette [Vegan]

  • 2 gluten-free wraps
  • 2 cups steamed pumpkin
  • 1/2 cup chickpeas
  • 2 tablespoons tahini
  • 1 cup de-stoned cherries, chopped
  • pinch black pepper
  • 1 tablespoon mint
  • 1 tablespoon thyme
  • 1/4 cup aquafaba or non-dairy milk
  • Cinnamon, to taste

How to Prepare Cherry Pumpkin Galette [Vegan]

  1. Preheat oven to 356°F and line a baking tray.
  2. Mash together your ingredients (including optional chickpeas, sweetener, vanilla essence, or tabasco), and mix with the cherries.
  3. Spoon half of the mixture into the center of each wrap, then fold in the sides of the wrap all round until you have a galette shape with a gap in the middle/top.
  4. Paint the tops and sides of the wrap with aquafaba or non-dairy milk and add cinnamon to your liking.
  5. Bake for 15 minutes, paint on more aquafaba/milk and cinnamon, then continue baking for another 10-15 minutes until browned on top.
