How to Prepare Spanakopita Bites [Vegan]
- Preheat the oven to 350 degrees F. Warm the oil in a medium skillet over medium heat. Add the onion and saute for 5 minutes, or until they begin to soften. Crumble in the tofu and fry for 5 minutes, stir, and fry 5 minutes more until it begins to lightly brown. Add the spinach and spices, mix well, and cook for 3-5 minutes more.
- Unwrap the phyllo shells and distribute evenly on a cookie sheet. Using a spoon, put about one tablespoon of filling into each shell. Bake for 10 minutes and cool slightly before serving. .
Notes
There will be extra filling at the end, this can be eaten as you would a tofu scramble
