Spanakopita Bites [Vegan]

A combination of nutritional yeast and tofu make this appetizer a cheesy delight for guests! These bites come together quickly and the use of nutmeg gives it that extra something special that will really impress your friends and family.

Ingredients You Need for Spanakopita Bites [Vegan]

  • 1 tbsp Olive Oil
  • ¼ White or Yellow Onion, diced
  • ½ Block Extra Firm Tofu (9oz)
  • 2 cups Spinach, chopped
  • 1 tbsp Dried or Fresh Parsley
  • ¼ tsp Pepper
  • ¼ tsp Salt
  • 1 tbsp Nutritional Yeast
  • ⅛ tsp Nutmeg
  • 15 Pre-Made Phyllo Shells

How to Prepare Spanakopita Bites [Vegan]

  1. Preheat the oven to 350 degrees F. Warm the oil in a medium skillet over medium heat. Add the onion and saute for 5 minutes, or until they begin to soften. Crumble in the tofu and fry for 5 minutes, stir, and fry 5 minutes more until it begins to lightly brown. Add the spinach and spices, mix well, and cook for 3-5 minutes more.
  2. Unwrap the phyllo shells and distribute evenly on a cookie sheet. Using a spoon, put about one tablespoon of filling into each shell. Bake for 10 minutes and cool slightly before serving. .

Notes

There will be extra filling at the end, this can be eaten as you would a tofu scramble
