Try this breakfast that's based on your favorite girl scout cookie!
Thin Mints Overnight Oatmeal [Vegan]
- 1/2 cup regular rolled oats
- 1/2 cup milk of choice
- 1/2 a banana, mashed, or 2 teaspoons maple syrup
- 1/4 teaspoon peppermint extract
- 1 tablespoon + 1 teaspoons cocoa powder
- 1 tablespoon semi-sweet chocolate chips (optional)
- 1 teaspoon chia seeds
- pinch of salt
- Combine all ingredients in a mason jar.
- Cover with lid and shake, shake, shake until combined.
- Store in the refrigerator overnight (or for several hours). Eat cold or warm up in the microwave!
