Ingredients

  • 1/3 cup and 2 teaspoons of vegan butter
  • 1/2 cup of sugar
  • 4 tablespoons of non-dairy milk
  • 1 teaspoon of vanilla extract
  • 2 cups of self-raising flour
  • 2 tablespoons of vegan caramel sauce
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder

Preparation

  1. Preheat your oven to 350°F and line a baking tray with parchment paper.
  2. In a mixing bowl or stand mixer, whisk the butter and sugar together until smooth.
  3. Add in the milk and vanilla and combine.
  4. Add in the flour, caramel sauce, baking soda, and baking powder and mix until a dough forms.
  5. Roll about 2 tablespoons of dough into balls, place onto the lined tray, and press down with the palm of your hand to flatten slightly. Repeat for all of the cookies.
  6. Pop the cookies into the oven and bake for 10-12 minutes.
  7. Once baked, remove them from the oven and allow them to cool. As they cool, they will crisp off.
  8. Drizzle on or sandwich in the caramel.
