Ingredients
- 1/2 package pasta of your choice
- 1 ripe avocado
- 1 cup medium firm tofu
- 2-3 garlic cloves
- 1/4 cup fresh basil
- 3 tablespoons lemon juice
- 1/4 teaspoon salt
- pepper to taste
- vegan parmesan or other desired toppings (optional)
Preparation

Cook your pasta according to the instructions on the package.

Add the avocado, tofu, garlic, basil, lemon juice and salt in a food processor. Process until smooth. Add the sauce to the drained cooked pasta. Add salt and pepper to taste.
