I love making bliss balls, they are such a great snack to keep in the fridge for a late afternoon sweet fix, a simple dessert or even breakfast on the run! These Green Buzz Balls are great because not only are they tasty, but they also high in protein, healthy fats and unrefined carbohydrates. These are a great snack to have on hand to keep your creativity a buzz!
High-Protein Green Buzz Balls [Vegan, Gluten-Free]
- 1 cup almonds
- 1/2 cup pistachios
- 6 soaked figs
- 1/2 cup dates
- 1 cup coconut
- 1 teaspoon of green powder
- 1 tablespoon lucuma
- 2 tablespoons agave
- 1/4 teaspoon of ginseng powder
- Process the nuts first until they break down slightly, then add the other ingredients and process until mixtures comes together and is sticky but retains some texture.
- Form into balls and roll in coconut. Store in the fridge for up to two weeks.
If you cant get your hands on the soluble variety of yerba mate just skip this ingredient- course leaves don’t work for this recipe!
