Ingredients

  • 1/2 cup goji berries
  • 1 cup wild rice
  • 1 teaspoon coconut oil
  • 1 shallot, thinly sliced
  • 1 1/2 teaspoon apple cider vinegar
  • 1 cup frozen green peas, defrosted in warm water
  • Himalayan salt and pepper to taste
  • 1 tablespoon hemp oil
  • 1 organic lemon juice and zest
  • 2 tablespoons hemp seeds for garnish
  • 2 tablespoons fresh mint chopped for garnish (optional)

Preparation

  1. Place the goji berries in a glass jar and cover with warm water.
  2. Cook wild rice as directed by package instructions (45-50min). Set aside.
  3. Meanwhile heat the coconut oil in a pan and sauté the shallot for 2 min. Remove from heat.
  4. Strain the goji berries and wash under running water. Drain well and dry by setting on a paper or cloth kitchen towel.
  5. Place rice, along with peas, goji berries, sautéd shallot, salt, pepper, hemp oil, lemon juice and lemon zest in a bowl and stir together.
  6. Once in the bowl, sprinkle each serving with 1 Tbs hemp hearts and chopped mint on top.
  7. Enjoy!
