For the Pancake Batter:

  • 1 1/2 cups banana/plantain flour
  • 1 tablespoon stevia
  • 1 tablespoon ground flax seed (optional)
  • Spices, such as cinnamon or pumpkin spice (optional)
  • 1/2 cup pumpkin purée
  • 1 1/4 cups almond milk

For the Chocolate Sauce:

  • 2 tablespoons cocoa powder
  • 1 tablespoon stevia
  • 3 tablespoons almond milk

Preparation

  1. Heat up a nonstick griddle to high heat.
  2. To make the pancake batter, combine the banana flour, stevia, flax seed, and spices.
  3. Add the pumpkin purée and almond milk and stir to form thick batter.
  4. Use a 1/3 cup measure to spoon the batter onto the pancake griddle. Cook for about 8 minutes on each side, or until the outsides are browned and crisp and the inside is cooked to your liking.
  5. Make the healthy chocolate sauce by combining ingredients and stirring.
