Ingredients

  • 1 can black beans , drained and rinsed
  • 1 can coconut milk
  • 2/3 cup medjool dates
  • 1/3 cup cacao powder
  • 1/2 teaspoon vanilla bean powder or 2 teaspoons vanilla extract

Preparation

  1. Add everything to your high-speed blender and blend until smooth.
  2. Spoon into your popsicle mould, add popsicle sticks/holders and freeze for at least 4 hours (preferably overnight).

Notes

Make sure your beans are prepared with minimal salt, or rinse them thoroughly before use. A small amount of salt won’t hurt, but too much will affect the whole balance of this recipe.
