Ingredients

For the Base:

  • 2 scoops vegan vanilla or chocolate protein powder
  • 3/4 cup gluten-free rolled oats
  • 3 tablespoons coconut flour
  • 2 tablespoons cacao or cocoa powder
  • 4 tablespoons maple syrup
  • 3 tablespoons cacao or seed butter
  • 4 tablespoons almond milk
  • 1/2 teaspoon vanilla extract

For the Coconut Layer:

  • 5.3 ounces unsweetened desiccated coconut
  • 1 tablespoon coconut flour
  • 2 tablespoons coconut oil, melted
  • 4 tablespoons maple syrup

For the Chocolate Layer:

  • 2 tablespoons coconut oil
  • 2 tablespoons maple syrup
  • 4 tablespoons cacao or cocoa powder

Preparation

  1. First make the base by placing the ingredients into a food processor or blender and mixing them up until the oats have formed a flour and the mixture comes together to form a dough.
  2. Tip this out into a lined small rectangular Tupperware or baking tin and press it evenly to cover the base. It should reach about 1/3 of the way up the sides. Freeze this while you make the coconut layer.
  3. Mix together the coconut, coconut oil, and the maple syrup to form a sticky mixture, then spread this over the base to cover it. Pack it in and press it down with the back of a spoon.
  4. Return the tin back to the freezer while you make the topping.
  5. Gently melt the coconut oil and the maple syrup, then remove them from the heat and whisk in the cacao or cocoa powder until you have a smooth, glossy sauce. Pour this over the coconut layer and spread out evenly. Return the tin to the freezer for at least 2 hours to set.
  6. When you’re ready to serve, bring the tin out from the freezer 5 minutes before.
  7. Carefully lift the bars out of the tin and place them onto a cutting board. Use a sharp knife to cut into bars.
