This vegan meatloaf is amazing. It is very easy to make, gluten free, super healthy and for everyone.

Chickpea Meatloaf [Vegan]


Cooking Time




For the meatloaf:

  • 1 can of 400g cooked chickpeas, washed and drained
  • Two flax eggs: two tablespoons of ground flax seed + 6 tablespoons of water
  • 1 chopped onion
  • 2 chopped carrots
  • 1 big handful of roughly chopped raisins, prunes or both
  • 1 big handful of roughly chopped walnuts, hazelnuts or both
  • 2 tablespoons of barbecue spices
  • 2 tablespoons tomato purée
  • 1 tablespoon tamari or soy sauce
  • 1 teaspoon garlic powder
  • 1/4 cup oats

For the glaze:

  • 2 tablespoons tomato purée
  • 1 tablespoon of Maple Syrup
  • 1 tablespoon of soy sauce or tamari
  • 1/2 teaspoon of paprika
  • 1 tablespoon of lemon juice


  1. Preheat the oven to 360ºF
  2. Prepare the vegan eggs by simply mixing the flaxseeds and water until an egg consistency forms.
  3. Smash the chickpeas with a potato masher or a fork, chop the onion and carrots and add all this to a large bowl and stir well. Then add the rest of the ingredients, including the vegan egg and toss so everything is well integrated. Finally add the oats and toss again.
  4. Pour the mixture into a loaf mold covered with baking paper and press it well so its compact. Bake for 30 minutes.
  5. Meanwhile prepare the glaze. Simply mix all the ingredients in a bowl.
  6. After 30 minutes, take the loaf out of the oven, spread the glaze on top and bake for 30 more minutes.
  7. Once it's ready, take it out of the oven and let it rest for 10 minutes in the mold before serving. And you're ready to go!
