Delectable Cashew Citrus Cream Cake with Pomegranate [Vegan]
Ingredients
- 1 1/4 cups walnuts
- 1 1/4 cups raisins
- 1 peeled orange
- Juice from 1 lemon
- 2 cups cashews
- 1/4 cup coconut nectar
- 1/4 cup coconut oil
- Pinch of Himalayan salt
- 1/2 teaspoon vanilla extract
- 1 cup pomegranate seeds
Preparation
- Pulse the walnuts into powder in your food processor.
- Add the raisins and pulse until it all begins to stick together.
- Press into the bottom of a lined 9 inch spring form pan.
- Put in the fridge.
- Blend all the ingredients until smooth.
- Taste and adjusting accordingly.
- Stir in a 1/2 cup of pomegranate seeds if you like, then pour onto your crust.
- Refrigerate overnight, or even better, 48 hours.
- Sprinkle with pomegranate seeds and serve!

Coconut Nectar
Yeah that’s the frustrating thing about wanting to go vegan. A lot of the recipes call for not easily accessible items, Himalayan salt?! And what’s coconut nectar? I’ve heard of coconut milk, not the same thing?
Not easily accessible?! I found Himalayan salt, coconut oil, other things commonly in vegan and raw food, all at 2 local healthfood stores in Melbourne. Plus, heaps of places deliver online :)
Publix carries a lot too, and will special order. The other resource is amazon. It’s crazy the food you can find on amazon! :)
You can get Himalayan salt at Whole Foods and I can get coconut products at my local small grocer’s.
They sell that stuff at Trader Joes or Whole Foods. Time for you to find a new grocery store.
My grocery store has it all. Health food store is you want to go organic.
Just try the recipes with the things you have access to. Use salt instead of Himalayan salt, use agave or other sweetener instead of coconut nectar! It does not have to be exactly the same as stated.
