This recipe is great because it only needs a few ingredient and gives you and incredible dish with a classic flavor profile. The creamy cashew cheese sauce is punctuated with chunks of vegan blue cheese and finished off with a fiery buffalo sauce.

Buffalo Cashew Mac and Cheese [Vegan]


Cooking Time




  • 4 cups cooked pasta
  • 1 1/2 cups cashews, soaked and drained
  • 2 teaspoons nutritional yeast
  • 1/2 cup vegan Buffalo sauce
  • 1/2 cup almond milk
  • 1 teaspoon sea salt
  • 1 cup bread crumbs
  • 1/2 cup vegan blue cheese


  1. Preheat oven to 400°F.
  2. Soak the cashews in hot water for 10 minutes.
  3. Drain them before you toss them in a food processor with the rest of the ingredients.
  4. Combine half of the sauce with cooked pasta.
  5. Toss this into a greased cast iron skillet.
  6. Take the second half and layer it on top.
  7. Top with vegan Panko.
  8. Bake it for 10-15 minutes or until golden brown.
  9. Serve warm and drizzle it with vegan blue cheese
