Ingredients You Need for Brownies with Caramel [Vegan]

For the Brownies:
  • 1/2 cup coconut oil, melted
  • 1/2 cup raw coconut sugar
  • 1/3 cup maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 cup cacao powder
  • 1/4 cup of almond butter
  • 3/4 cup of gluten-free mix flour
  • 1/4 cup of almond flour
  • 1/3 teaspoon baking powder
  • Pinch of Himalayan pink salt
  • 1/2 cup of almond milk

For the Caramel Layer:

  • 1 cup Medjool dates pitted and soaked
  • 1/2 cup plant almond milk
  • 2 tablespoons tahini
  • 1/4 cup almond butter unsweetened
  • Pinch of Himalayan pink salt
  • 1 teaspoon caramel extract

For the Chocolate Drizzle:

  • .85 cups (200g) dark chocolate
  • 1 tablespoon coconut cream
  • 1 tablespoon maple syrup

How to Prepare Brownies with Caramel [Vegan]

For the Caramel Layer:
  1. Blend all in a blender until smooth.

For the Chocolate Drizzle:

  1. Melt the chocolate including the other ingredients above the steam while stirring with a spoon or whisk.

For the Brownies:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, start whisking coconut oil with maple syrup coconut sugar and vanilla extract.
  3. Whisk until smooth, then add almond butter and whisk well again.
  4. Add salt, baking powder and cacao powder and whisk until smooth.
  5. Blend in the almond flour and start adding flour and milk.
  6. Stir thoroughly by using a spatula.
  7. Pour the dough to a baking pan lined with parchment paper and smooth out the surface with a spatula.
  8. Bake for 20 minutes or until the toothpick comes out clean.
  9. When ready, let it cool down for at least 30 minutes.
  10. Remove from the pan, apply the caramel layer and place into a refrigerator for 30 minutes.
  11. Drizzle with chocolate and sprinkle with almonds.
  12. Refrigerate for two hours and serve.
