Apart from being extremely tasty, some say basil could be one of the healthiest foods around….why? Because it is loaded with flavonoids which protect our cell structures, it has great anti-bacterial properties, is a great liver detoxifier and has some other serious body-mind benefits. Here is a quick, easy recipe using basil to create a tasty zucchini pasta that can be had as a snack, a meal on its own or makes for the perfect side dish!

Basil Pesto Zucchini Pasta [Vegan, Gluten-Free]

Pesto Sauce:
  • 2 handfuls of basil leaves
  • 1 ½ tablespoons of pine nuts
  • ½ cup olive oil
  • Pinch salt
  • Pinch pepper
  • ½ teaspoon chili powder
  • 2 cloves garlic
Zucchini Pasta:
  • 3 large zucchinis
  • 2 cloves garlic
  • Rice bran oil or coconut oil


  1. To make the pesto, place all ingredients in a blender or food processor and combine to form thick paste.
  2. To make the pasta, cut zucchini into thin strips (spaghetti like), using a knife or slicer.
  3.  In a frypan heat the oil, add in the chopped garlic and zucchini strips. Sautee until zucchini is slightly soft.
  4. Add in the pesto, stir through while still hot and serve.
