1. Ceviche? Yay!
Vegan Ecuadorian-Style Hearts of Palm Ceviche

Starting off the meal right, we have this delicious Hearts of Palm Ceviche by Nancy Lopez-McHugh. What makes this ceviche really unique is the Ecuadorian flair. It’s tender and crispy, tart and zesty and fresh, and oh so perfect served with a crunchy tostada or corn chips. Serrano chiles give this dish a nice kick, balanced perfectly with the orange juice and zesty lime juice

If you don’t have hearts of palm lying around, switch it up by using Cauliflower! Dora Stone creates a dish that is light and colorful. This ceviche is closest to the Mexican version which contains onions, tomatoes, and peppers. Onion, cilantro, and lime juice have also been added to create a spicy, tangy, and refreshing appetizer. Serve in an avocado for a fun presentation and with plenty of tostadas or chips!

2. Keep It Cool With Refreshing Drinks
Vegan Horchata

This Vegan Horchata by Dora Daily is the perfect solution to those warm weather nights. Icy, creamy, and with a kick of cinnamon, this recipe is simple, delicious and sure to cool you down while tantalizing your taste buds.

3. Tacos! Obviously.
Vegan Buffalo Chickpea Tacos With Celery Ranch Sauce

In this dazzling Tacos recipe by Vegan Richa, fiery chickpeas are paired with a cooling, creamy dairy-free celery ranch sauce in a taco shell for an easy weeknight dinner. Toss the chickpeas in Buffalo sauce, add some roasted vegetables and greens, top the tacos generously with ranch dressing, and supper is ready. This also makes a great appetizer for game day.

If you want a more meat-like consistency, how about you try making Walnut Meat? These tacos by Crista Clark are made from a walnut base and is absolutely incredible. Put it on tortillas with some homemade salsa, cashew sour cream, and guacamole or make it an entirely raw meal and serve it on leaves of cabbage or lettuce.

4. Taquitos For Fun Finger Food!
Vegan Hearty Black Bean and Roasted Carrot Taquitos

These Hearty Black Bean and Roasted Carrot Taquitos seriously hit the spot. Annie McGee knows how to please a crowd! This delightful finger food is packed with roasted carrots, hearty black beans, and then wrapped in a crispy corn tortilla. Plus, you can get creative when it comes to the toppings

Don’t forget the Guacamole. Nikki and Zuzana put a healthy spin on the guac by adding peas for an extra protein kick.

5. Don’t Forget Dessert
Vegan Coconut Flan

This creamy, dreamy flan, served with a drizzle of sweet caramel sauce, is the perfect dessert to wrap the night up! Traditional flan is made from eggs and gelatin but in this recipe by Travis Piper, it is made from coconut milk, tofu, and agar agar powder. Making the flan might seem like a science, but it’s a simple process that can be mastered by anyone.
