Exciting news for students at Gonzaga University in Spokane, Washington! The university’s food service provider, Sodexo, recently removed all animal products from Gonzaga’s vegetarian dining station, making it 100 percent vegan-friendly!
The now entirely plant-based campus spot is called the “Zagriculture” station, and while it will be the only consistently vegan station inside the University’s dining hall, it will not be the only spot with vegan options available to students interested in eating plant-based. Pretty cool!
How Did They Do It?
Sodexo initiated the change by instituting some simple swaps in its menu offerings. According to a bulletin released by Gonzaga, students are now able to order black bean burgers at Zagriculture, but can also go and pick up a vegan cheese pizza, a side or entrée of fresh steamed vegetables, a vegan scramble or burrito, and vegan stir fry. Additionally, salads are made with produce grown in the school’s rooftop garden.
Gonzaga also decided not to renew its contract with Panda Express, and is replacing the fast-casual restaurant with Sodexo-run dining concept “1887”, which allows students to customize and order salads, burgers, sandwiches, and more off touch-screen kiosks.

The biggest bonus is that everyone around the table gets excited when they realize it’s fajita night.
