This is an absolutely mouth-watering raw caramel chocolate pie. The ingredients in this pie might surprise you! We're talkin' caramel made from dates, and chocolate made from avocados....what!? Yes, it's true, and it works. You won't even notice that this pie is free from unhealthy refined ingredients. It tastes better than the real thing. If you are wondering about the almond flour/almond meal, I made my own using the leftover pulp from making homemade almond milk. I dehydrated until completely dry and then whizzed it up in the food processor to make flour. Alternatively, you can just grind up raw almonds, or buy almond flour.
Raw Chocolate Caramel Pie
Ingredients You Need for Raw Chocolate Caramel Pie
- 1 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 4 pitted medjool dates
- 1/4 cup coconut oil
- 2 Tbsp water
- 1/2 cup pitted medjool dates
- 1/4 cup coconut syrup
- 2 Tbsp coconut oil
- pinch of sea salt
- pinch of vanilla powder or seeds of one vanilla bean
- 1 medium avocado, skin and pit removed
- 1/4 cup raw cacao
- 1/4 cup coconut syrup
- 2 Tbsp coconut oil
How to Prepare Raw Chocolate Caramel Pie
- Mix all ingredients together in a food processor until it comes together.
- Press into greased 6 inch round springform pan.
- In a food processor, mix all ingredients together until smooth.
- Spread over crust.
- in a food processor, mix all ingredients together until smooth.
- Spread over caramel layer.
- Place in the refrigerator until chilled.
- Remove from pan and enjoy!
