Just like unique and innovative donut recipes, plant-based protein and the demand for it is skyrocketing. As more and more people fully embrace the vegan lifestyle, and not just the flexitarian dietary guidelines, the yearning for plant-based alternatives grows.
At the National Restaurant Association Show, the health and sustainability benefits of vegan breakfast sausage, egg substitutes, bratwurst, and sliders were featured and promoted. On the exhibition floor, a variety of plant-based products were explored and explained.
One of the featured foods was different egg substitutes. Mung beans and turmeric can be transformed into a food product that looks and acts just like scrambled eggs. Just Inc. arrived at the show with a mung bean, oil, water and spice scramble, complete with bright pops of yellow just like actual scrambled eggs. Jenna Cameron said, “We work with Michelin-starred chefs to do all our product development. If it doesn’t taste good, then none of the other stuff matters.” Last year, Just Inc. featured mayonnaise and salad dressings made from yellow pea protein. They try to steer clear of the vegan label, as they feel it scares people away.
At the show, vegan sausage options were also abundant. Of course, Beyond Meat’s Beyond Sausage won awards for its authentically delicious tastes and textures. Jerry Galinatis said, “The restaurant industry is starving for new products to offer vegetarians, but the irony is that most of our product is being consumed by carnivores who are trying to eat healthier.”
Frozen food distributor, Central Foods, reported that volume sales of vegetarian and vegan sausages increased by 20% since 2016 to the end of 2017, so we already knew that the demand for vegan sausage was growing by the second.
