Quinoa is also incredibly filling, so a little goes a long way. I made this dish for about six people as side dishes and there were still leftovers to spare.

Not going to lie, sometimes I love a good Chipotle bowl/salad. Especially on the go. Or when I’m too tired and lazy to cook. Brown rice, black beans, peppers, corn, salsa, lettuce, a lil’ guac – what’s not to love? I know they (unfortunately) have lots of oils, but once in a while, I give in … balance right? This Spicy Kale and Quinoa Black Bean Salad by Shannon Leparski tastes THE SAME as Chipotle, and without any oil whatsoever. You don’t need it, I promise.

My idea was to make a one pan, flavorful, Mexican meal-so I flavored the warm oil with garlic and oregano first and then mixed in the rest of the ingredients except lettuce and avocados. I had a lot of extra vegan taco “meat” and other toppings after I made two giant tacos, so I threw the rest on top of some romaine lettuce and baby kale to make a delicious taco salad! All in all, this is a really filling, healthy and delicious meal.
