Food tech company Chinova Bioworks is creating a fining agent out of mushrooms to help make beer more vegan-friendly. Traditionally, beer is made with ingredients that are entirely vegan-friendly. However, many breweries use animal-based fining agents, such as pig stomach enzymes or fish bladders, to filter the beer.
Chiber, which is made of white button mushroom fiber, is a more sustainable option that doesn’t alter the taste or consistency of the beer itself. It has also been shown to filter much faster than animal agents, creating an overall better product after filtration.
Co-founder of Chinova Bioworks, David Brown, said, “People are searching for vegan and plant-based options for every aspect of their lifestyle. We are committed to innovating and providing sustainable solutions based on our white button mushroom fiber technology.”
Brown said, “Alcoholic beverages, particularly beer, are plagued with the use of animal-derived and synthetic ingredients. We believe we can make a big impact here with Chiber.”
This new technology has been a long time coming and is great news for the vegan community. It will help remove yet another source of animal products from a product that never really needed them and make it that much easier for vegans to find vegan-friendly beer.
