Kim Kardashian’s chef, Marina Cunningham, shared an eggplant parmesan recipe with sister Kourtney’s website, Poosh. The recipe includes a vegan marinara sauce, too!

This recipe uses Just Egg, and chickpea flour so it’s gluten-free! The recipe also includes vegan parmesan. You can also substitute zucchini for the eggplant.

Kardashian has gone plant-based before. In 2019, she told her Instagram followers, “I am eating all plant-based when I am home.” She also told followers that a plant-based diet helps her psoriasis. Kardashian shared on Poosh, “I live a healthy life and try to eat as plant based as possible and drink sea moss smoothies. With all the stress in life, I try to make sure I take time for myself so that I am centered and keep my stress to a minimum. I hope my story can help anyone else with an autoimmune disease feel confident that there is light at the end of the tunnel.”
