This New Vegan Thai Restaurant in Seattle is All About Fresh Seasonal Food!

Craving Thai food? Look no further than Kati Vegan Thai, a new eatery in Seattle, Washington.

Kati Vegan Thai’s 100 percent plant-based menu evolves with the seasons, so you are always eating fresh, easy-to-source ingredients when you visit. While you can certainly always expect to find classic Thai dishes on the menu, such as salads, soups, Thai-style fried rice, curries, and stir-fries, the exact vegetables and ingredients that comprise your meal will sometimes vary.

“It’s about picking the best ingredients at the open air market every afternoon. It is trusting in technique over ‘secret sauces’. It’s about channeling natural flavor combinations instead of eclectic fusions and rare ingredients from afar,” Kati Vegan Thai states on its website.

Not only does Kati Vegan Thai use no artificial flavorings or processed ingredients in its kitchen, but their food is also devoid of MSG, flavor enhancers, GMOs, and hydrogenated cooking oils. They use fresh, local, non-GMO tofu, use organic and local produce when possible, and use biodegradable bags, boxes, and utensils.

Though the restaurant is relatively new still, it is already cultivating a loyal fanbase, with one reviewer writing on Yelp: “Just when I thought I had to eat the same bowl of vegetables for lunch every day for the rest of my life, (Kati Vegan Thai) goes and opens five minutes away from where I work. Now I get to have fresh mango salad, vegetable curry, crispy “egg”rolls, creamy Thai Coconut Soup, savory thin noodles, and fresh fruit for dessert. I have never felt better about being vegan in Seattle.”
